There’s a personal goal of mine: to master the meringue (and everything that’s meringue-like.) A couple of years ago I tried my hand at making macarons. The feet were somewhat there but there was still much practice to be desired. I did all of that without a stand mixer. Now, just two years later, I’m still without a stand mixer but I’m still working at this whole meringue goal. I’m pleased to say that I think I’ve hit a good point! For my family’s Christmas party I decided to use the egg whites still stored in my fridge (from Thanksgiving baking) and create Mocha Meringue Kisses, a recipe I found on Tastespotting and led me to the blogger who posted it: The Tough Cookie. It was a nice site and gave me whole new insight when it comes to meringue making because this recipe it called for double boiling the egg whites for a bit so that the sugar dissolves.
